Ingredients:
- 1 lb. spinach
- 3/4 c. water
- 1 tomato
- 1/4 tsp. tamarind extract
- 4 cloves garlic
- 1 Tbsp. oil
- 2 Tbsp. onion (chopped)
- 1/2 tsp. urad dhal
- 2 hot green peppers
- 1/2 tsp. mustard seeds
- 3/4 tsp. salt
Method:
- In a saucepan, cook spinach, tomato, crushed garlic, onion, pepper and salt in 3/4 cup of water.
- When spinach becomes very soft (cooked well) remove saucepan from heat.
- Let it cool for about 1/2 hour. Pour the spinach mix and tamarind into the blender and grind it into a smooth paste.
- Heat oil in a frying pan and saute mustard seeds and urad dhal.
- When mustard seeds crack, add the spinach mixture into it.
- Stir the mixture well and remove from heat.
- Goes well with plain rice.
