Ingredients :
2 lb. green beans
3 Tbsp. oil
1 c. water
1/2 tsp. mustard seeds
1 tsp. salt
1/2 tsp. urad dhal
1 tsp. sambar powder
1 Tbsp. onion (chopped)
2 Tbsp. coconut (shredded)
Method:
- Dice green beans into small pieces.
- Mix 1 cup of water, salt and sambar powder with the cut beans in a saucepan and cook until they become soft.
- When the water evaporates, add the coconut to it.
- Stir the mixture an remove from the heat.
- In a frying pan, heat the oil and saute mustard seeds and urad dhal.
- When the mustard seeds crack, add the onion.
- When the onion turns into golden color, add the cooked beans.
- Mix well and remove from the heat. 8 servings.
- This same preparation can be used for many other kinds of vegetables.
